The Cheese Enchilada Test 

When I lived in Los Angeles there was a family who was originally from Mexico who had us over on several occasions for cheese enchiladas. The cheese was hot and almost creamy inside and a little toasted on top. They were truly delicious. 

Because of my love for them, every time I try a new Mexican food place, I order cheese enchiladas. I figure if they can get those right, the rest of the food is probably good. Here's my top three places for cheese enchiladas in the St. George area.

#3 on the List: Sanchez Mexican Food

The enchiladas were good. They were hot all the way through, and the red sauce was tasty. It was what I expect a good Mexican food dish to taste like. Bonus points for excellent rice and beans and clean atmosphere.

The cheese inside the enchiladas is the perfect texture of light cheesiness. The sauce is good. For a Mexican food place off the beaten path, this place serves good food. Plus, it reminds me of Napoleon Dynamite.

This is it for me when I'm looking for cheese enchiladas like I was served in LA. Toasted cheese on the top, the perfect blend in the middle. Everything is good at Ernesto's, but I only get the cheese enchiladas.

I know my take may not be what you look for in Mexican food. My wife believes the beans and rice are the way to judge. She says if they take the time to get this right, they really care about the food. Others swear by the salsa.
