Hey Utah, Your Food Storage Should Have These Tubers
There is a plant that grows all around in the world in most conditions that can provide nutritious meals in a pinch. It would be a good idea to add a bag of these tubers to your food storage.
Kind of Like a Potato But Easier to Grow
It is the Jerusalem artichoke, and it is a native to North America despite its name that seems tied to the middle east. It has nothing with artichokes either. The guy who was first introduced to the plant by Native Americans thought it looked like an artichoke.
Originally known as sunroot, the Native Americans were well aware of this plant that grows an edible tuber kind of like a potato. They shared it with the colonist back in 1521 as part of that first Thanksgiving.
Also called sunchokes, the plant grows 6 to 10 feet tall with yellow flowers and knobby tubers underground. The tubers can be cooked or boiled for a nutritious meal. People use it all over the world even though it is less popular in North America, ironically.

The reasons Jerusalem artichokes are so good in a survival situation is that you can grow them easily in almost any soil and climate. They spread quickly, providing lots of tubers for each plant.
Get Some Tubers and Store Them in a Dark Bag for Storage
Tubers that you can store and grow can be purchased on the internet. It might be good to keep some on hand should you need a food source. You could also keep a patch growing in the corner of your yard to use immediately should you need it.
The tubers store well through cold winters. And if you need to hide what you are growing from an invading army, you just cut the stalks off and leave the tubers in the ground unnoticed where they will stay good for a long time.
