I remember the first time I tried carne asada fries. I was blown away, I mean full loaded nachos except you swap out the chips for a golden bed of crispy, french fries, the crunch of their edges whispering promises of potato and succulent, marinated strips of meat. Wow, each bite was a tender embrace of beefy smoke and potato goodness that got my taste buds weeping for joy. It was either that or the spice was a little too hot for me.

Carne asada fries were my go-to for a long time, but somehow, they caught up with me and no I don’t mean that I had to run to the restroom right after, Dave. (I knew he would go there if I didn’t stop him.) They just sat heavy in the stomach, maybe it’s the cilantro. If this is you and you are looking for some lighter carne asada fries when in the Las Vegas area, might I humbly suggest Rivas Mexican restaurant.

A few years ago they canvased the area with signs bragging about an award they received for their carne asada fries and finally I decided to try a sampling with some friends. I don’t know what it was, but I got all of the flavor without any heavy after-effects. It was such a good experience that I have been back a few more times just to test the theory.
