It’s that time again—bucking broncos, barrel racing, and mutton busting. But arguably the best part of the Clark County Rodeo is the delicious and oh so good for your fair food. I love it.

Now I heard a rumor that this year there is going to be an event that will be sure to get tongues wagging in conversation and desire to sample, a seafood cook off. There are so many delicious options including what might bring home the prize for me this year, the delicious moment when a pig and a shrimp became team mates to bring a flavor blast. We are talking about bacon-wrapped shrimp.

How did this heavenly idea come to be? Were there pigs swimming in shrimp waters, or did the shrimp take a walk on the farm? It’s a pig in a blanket, except the pig is the blanket. Sizzling crispy bacon with tender, savory shrimp. Maybe the pig and the shrimp were dancing, and, in a Lewis Carroll twist of fate, they danced too close to the pool of bubbling oil, only to deliver a dish worthy of the Mad Hatter's tea party.

If you are a health nut like myself and enjoy the healthy fair foods then you need to try the bacon wrapped shrimp, to go along with a sensible funnel cake and candy apple. I may be in denial, but surely that covers some of the essential food groups.

I better sign up for the chasing of the bulls to work some of this off before I drive home.

The Clark County Rodeo is April 9th to the 13th, tickets range from $15.00 to $50.00 and is bound to be a great, delicious time.
